POLYPHENOL CONTENT: 557 mg/kg.
Picuda EVOO is naturally rich in antioxidants that help combat oxidative stress, support anti-inflammatory effects and protect your cells. (Well above the 250 mg/kg level considered “high polyphenol” in the EU).
ACIDITY/FREE FATTY ACIDS: 0.25%.
EU and International Olive Council (IOC) standards require EVOO to be below 0.8% free acidity. 0.25% is ultra-low, indicating top-grade, fresh EVOO with a cleaner, smoother taste.
FRESHNESS: 5 meq O₂/kg. The IOC limit for EVOO is 20 meq O₂/kg. A value as low as 5 shows very little oxidation, which translates into fresher flavour, better aroma and longer shelf life.
HEART-HEALTHY FATS: Around two-thirds of the fat is oleic acid, a monounsaturated fat linked in large studies to better cholesterol profiles and reduced cardiovascular risk.
